Water moves through coarse grounds quickly; fine grounds slow it down and pull out more. Too slow and the cup goes bitter — compounds that need time to extract, but not that much time. Too fast and it's sour: the easy, sharp notes come out but the sugars don't follow. The right grind is the one that gives water enough time to meet the coffee without overstaying.

Most people brew coffee that's either too weak (too little coffee, too much water) or compensate with a finer grind and over-extract. Starting with 60 g of coffee per litre of water is the standard starting point — not because it's universal, but because it's a reliable base to adjust from. Measure once, brew twice, tune from there.

Distilled water extracts poorly — minerals in the water act like a ferry, carrying flavour compounds from the coffee into the cup. Heavily chlorinated tap water leaves a flat or chemical note. The sweet spot is water with low-to-moderate mineral content, no strong off-tastes, around 93°C. Most filtered tap water gets you there.

Let it drop to around 93°C — about 30 seconds off the boil. Boiling water extracts too aggressively and can scorch lighter roasts.
A quick pour of hot water through the paper filter removes the papery taste and warms the dripper. Pour that water out before adding coffee.
Grind medium-fine — imagine table salt, slightly coarser. Use 15 g of coffee for 250 ml of water (your cup). Weigh if you can.
Start with twice the weight of the coffee in water — 30 ml for 15 g of coffee. Pour slowly over the grounds and wait 30 seconds. The bloom releases CO₂ from fresh coffee and sets up even extraction.
Pour the rest of the water in gentle circular motions from the centre outward, keeping the bed evenly wet. Don't rush — the water does the work.
Once you've poured all the water, the coffee will continue draining. Total brew time from first pour: 3 to 4 minutes.
If it's bitter, go coarser or brew a little faster. If it's sour and thin, go finer or slow the pour. One adjustment at a time — otherwise you won't know what worked.
A burr grinder — hand or electric — gives you consistent particle size, which matters more than brand. Blade grinders chop unevenly and produce a mix of dust and chunks that extracts at different rates.
Usually, yes. If your tap water tastes fine on its own, it'll work for coffee. A standard carbon filter removes chlorine and improves clarity. Avoid softened or distilled water — too little mineral content.
At their best in the first two to three weeks after the roast date. After six weeks, the aromatics have largely escaped. The roast date on the bag tells you more than the best-before date.
A little. Darker roasts are more soluble and can taste stronger at the same dose, so some people dial down slightly. But start with the standard ratio and adjust by taste — don't overthink the label.
Whole beans freeze well for long-term storage if sealed airtight — but only freeze once, and use them within two weeks of thawing. Daily-use beans do best in an opaque, airtight container away from heat.
The bloom is a short pre-infusion pour that lets CO₂ escape from fresh coffee before the main brew. Fresh beans bloom a lot. Older beans barely bubble. It improves evenness — worth doing every time.
